1:30pm – For Peat’s Sake

Host: Vancouver Companions of the Quaich

In whisky-making, peat is a key component. Peat bogs in Scotland have been heating homes and whisky stills for generations. Peat is not only used to heat the whisky pots but is also burned to dry the damp barley malt. Different whiskies have different drying times, giving each a particular flavour.  For instance, Laphroaig dries its malt over a peat fire for 18 hours – giving the whisky a strong, peaty flavour.  If you love peat – or want to explore a world of new tastes, this is the session for you.
